Better than Hot Honey: Ruby Crunch Snack Mix

This recipe for roasted nuts and seeds using honey + Ruby Crunch is simple, satisfying and healthy.  It is the perfect portable snack to keep you fueled throughout the day or share with others at a gathering.  It also makes an easy homemade gift.

Sweet and sticky honey + rich and savory Ruby Crunch coat everything with an irresistible flavor combination, and once baked, create an addictive crunch.  Imagine candied brittle – that’s actually good for you.

3 cups mixed nuts and seeds*

1 heaping TBS Ruby Crunch

1 heaping TBS honey

Big pinch of salt

1. Preheat oven to 225°F and line a baking sheet with parchment paper or silicone baking mat.

2. In a large bowl, add the Ruby Crunch and honey, and mix until combined.

3. Add the nuts and seeds and mix until everything is evenly coated.

4. Spread the mixture in a single layer on the prepared baking sheet, making sure they are not crowded, so they roast evenly and develop a crispy texture.

5. Sprinkle with salt.

6. Bake in the oven for 25-30 minutes until they are toasted and some are slightly golden brown.  Pull them out and give them a stir a few times.

7. Let the mixture cool completely on baking sheet. As they cool, the coating will set up and harden.

8. Transfer to an airtight container and store at room temperature for up to two weeks.

Note: Ruby Crunch can be heated at low temperatures.  We recommend heating Ruby Crunch at temperatures no greater than 250°F in the oven.  If using in a sauce, such as in a sauté pan, add Ruby Crunch at the end.  This is because the garlic in Ruby Crunch is already cooked and is susceptible to burning if heated at higher temperatures.

* Here we used 2 cups raw cashews, 1/2 cup raw pumpkin seeds and 1/2 cup raw sunflower seeds

Try experimenting with add-ins such as dried fruit or a big pinch of cinnamon.  What’s your favorite way to make Ruby Crunch snack mix?  When and how do you enjoy it?  Let us know in the comments below.
