The season of comfort food calls for a side dish that delivers both warmth and flavor. This recipe is deceptively simple to make, melding caramelized delicata squash slices with a simple sauce to create a glaze that clings to each slice and gives a burst of flavor.
PREP TIME: 5 minutes | COOK TIME: 30 minutes | TOTAL TIME: 35 minutes
Serves: 6 as a side
Ingredients
· 2 pounds delicata squash
· 3 tablespoons Ruby Crunch Chili Crisp
· 3 tablespoons maple syrup
· 1 teaspoon rice vinegar
· 1 teaspoon olive oil
· 1 teaspoon salt
· Pepper
Instructions
1. Preheat the oven to 425°F.
2. Trim the ends of the delicata squash. Slice in half lengthwise and then scrape out the seeds and fibrous flesh. Cut each squash half crosswise into 1/2" slices. Transfer to a bowl. Add olive oil, salt, and pepper. Toss to coat everything.
3. Transfer squash slices to a rimmed baking sheet, making sure there is a space between each piece. If they are crowded, they will steam rather than roast.
4. Cook until the slices are golden brown on the bottom, for about 10-15 minutes. Flip each slice over and rotate the baking sheet 180 degrees when returning to the oven. Roast another 10-15 minutes.
5. Meanwhile, mix the Ruby Crunch, maple syrup, and rice vinegar together.
6. Pull the baking sheet out of the oven and reduce the temperature to 400°F. Drizzle the mixture over the delicata squash and mix the pieces around so they are all coated. Return to the oven for another 5-10 minutes until the mixture has thickened up, clings to each slice and browned at the edges.
