Healthy Snack Brittle with Ruby Crunch Chili Crisp

This recipe for roasted nuts and seeds using Ruby Crunch and honey is simple, satisfying, and healthy. It is the perfect snack to keep you fueled throughout the day or share with others at a gathering. It also makes an easy homemade gift.

 

Sweet and sticky honey combined with rich and savory Ruby Crunch coat everything with an irresistible flavor combination, and once baked, create an addictive crunch. Imagine candied brittle – that’s actually good for you.

 

PREP TIME: 5 minutes  |  TOTAL TIME: 30 minutes

 

Ingredients

·         3 cups mixed nuts and seeds*

·         1 heaping tablespoon Ruby Crunch Chili Crisp

·         1 heaping tablespoon honey (or other sweetener)

·         Big pinch of salt

 

Instructions

1.      Preheat oven to 225°F and line a baking sheet with parchment paper or silicone baking mat.

2.      In a large bowl, add the Ruby Crunch and honey, and mix until combined.

3.      Add the nuts and seeds and mix until everything is evenly coated.

4.      Spread the mixture in a single layer on the prepared baking sheet, making sure they are not crowded, so they roast evenly and develop a crispy texture.

5.      Sprinkle with salt.

6.      Bake in the oven for 25-30 minutes until they are toasted and some are slightly golden brown. Pull them out and give them a stir a few times.

7.      Let the mixture cool completely on baking sheet. As they cool, the coating will set up and harden.

8.      Transfer to an airtight container and store at room temperature for up to two weeks. 

 

* Here we used 2 cups raw cashews, 1/2 cup raw pumpkin seeds, and 1/2 cup raw sunflower seeds

 

Try experimenting with add-ins such as dried fruit or a big pinch of cinnamon.
