Ruby Crunch Toast with Heirloom Tomatoes

Adapted from Molly Baz’s Shingled Tomato Toast with Sesame Mayo

 

Streamline this viral late summer gem with the help of Ruby Crunch and watch it disappear. The epitome of fresh, simple, delicious food.

 

Ingredients

·         1 large tomato or 2 medium tomatoes

·         Bread, grilled or toasted

·         1/4 cup mayonnaise

·         1 tbsp honey

·         1 tbsp Ruby Crunch

·         Big squeeze lemon juice

·         Salt and pepper, to taste

 

Instructions

 

Prepare the spread: Mix the mayonnaise, honey, and Ruby Crunch together. Set aside.

 

Prepare the bread: Toast or grill the bread. 

 

Assemble: Spread the Ruby Crunch mayonnaise onto the toast. Slice the tomatoes and layer on top of the spread. Season with salt and pepper. Drizzle with more Ruby Crunch.
